Protein dinner anchor...

I’m trying to stop treating protein like a puzzle I solve at 8 p.m. when I’m already tired. This week I made a big tray of chicken thighs, shredded them, and kept a container next to the edamame in the fridge.

Lunch has been 1 cup of the chicken plus 1/2 cup shelled edamame and a little salsa — not fancy, but I actually finish it. My small win: three workdays in a row with no 4 p.m. vending machine detour.

I’m also weirdly loyal to cottage cheese with everything bagel seasoning on cucumber slices. What are your no-fuss protein anchors?

Do you batch one thing, keep freezer backup, or just repeat the same meal until it stops working?

The shredded chicken + edamame combo is genius because it’s grab-and-go. One thing that broke my dinner homework loop: I pre-log my protein in the morning. If I know I need 40g at dinner, I enter it before I’m hungry, so dinner is execution, not math.

I also keep an “emergency protein” shelf: tuna packets, cottage cheese cups, frozen shrimp. Not exciting, but it stops the 8 p.m. cereal spiral. On my plateau, anchors like this are the only thing keeping me from grazing.

Question: do you rotate the salsa? I got sick of the same jar after two weeks and almost quit the whole system.

Night shifter here. My dinner is 3 a.m., so I pre-portion the chicken into single containers the day I cook it. Tired me doesn't scoop anything.

Salsa in a squeeze bottle. Sounds dumb, but I actually use it instead of skipping the veg.

Does yours dry out by day four? Mine does unless I spoon some of the pan juices back over it before the container hits the fridge.

This is exactly the kind of boring I need. I do a similar thing but keep a bag of frozen edamame in the freezer and microwave it straight into the container—tastes fresher by day 3.

My swap for salsa is a spoon of chili crisp or pesto, depending on mood, so I don’t get sick of it. I also add a handful of roasted broccoli or shredded cabbage for crunch.

Question: how long does your chicken stay good? I shredded mine too fine once and it got weirdly dry by day 4.

Now I leave the thighs a little chunkier.

Love this. My version: I brown a pound of ground turkey with taco seasoning, freeze it in 1/2-cup silicone cups, then microwave one with cheese and whatever veg is dying in the drawer.

The kids call it “nacho bowls” and I call it dinner not being my problem. I also keep turkey sticks and roasted chickpeas in the snack drawer for the 5 p.m. chaos.

Do you freeze any of the shredded chicken, or does it stay in the fridge all week? Mine gets ignored by day three, but frozen shreds feel like a whole chore.
