I run a small cafe, and for years I tasted everything: a spoon of ganache, the crusts off a tart, a 'throwaway' scone that wasn't really throwaway. Portion control felt impossible when the inventory was also the temptation.
Last week I realized I've been at this for 14 months: down 38 lbs and from a size 20 to a 14, and my apron strings tie in the front with room now. The odd part is I still plate by instinct, but I take one bite for quality instead of six bites for stress.
I pack a real lunch in a labeled container and sit down to eat it, which I never did before. The butter smell still gets me, just not in the same grabby way. Any other food-business folks here? How do you handle the 'just taste it' moments?
